Vegan Konjac Sausage at Do Do’s Kitchen [Euro Myanmar Food Fusion Week]

The Vegan Konjac Sausage is an invention is a collaboration between the Myanmar Konjac Association and Do Do’s Kitchen, where it will be on menu throughout Food Fusion Week!

Inspired by the famous Kayah sausage, the recipe came about in a cooking session and exchange with Spanish chef David Aldea (@lacavaphuket) in preparation Food Fusion Week. The bouncy texture of the konjac replicates the myosin in sausages, and it is blended with spices and honey to get just right the taste of its inspiration — a balance of sharpness and sweetness.

In the words of the Chairman of the Myanmar Konjac Association, this root vegetable is a true product of the people who live in Myanmar’s mountains. To him, while rice paddies, peanuts or sesame seeds are suitable for growing in the flatlands, in the higher peaks, this humble, hardy plant is crucial to their residents’ livelihoods. It is versatile: it can be dried, powdered or — as used in this recipe — a shredded noodle-form.

Chef and owner at Do Do’s kitchen, Htet Ein Hnin is a successful, self-taught chef, who actually graduated as a trained engineer of nautical science. She believes it is this background that pushes her to experiment with food, and to expand boundaries with old Myanmar recipes she learned from her mother. She saw the potential in the chewy texture of the noodled-konjac, and immediately wanted to test if it could be developed further, much to the delight of the producer, U Kyaw Thu.

Managing Director of the Victory Garden food production company, and the Chairman of the Myanmar Konjac Association, U Kyaw Thu takes great pride in Myanmar Konjac, or wa ou, as it is known locally. He sees the development of the konjac to be crucial to helping people’s livelihoods in the mountains, who have limited resources available to them. Additionally, because the plant needs good shade, the konjac works very well alongside conservation efforts for protecting the mountain forests of his home.
