TELL US ABOUT YOU
I was born and raised in Tunisia. I left after my French baccalaureate to pursue a career in F&B in many countries. I am a food aficionado and extremely enjoy wine (sometime too much J ).
WHAT WAS THE INSPIRATION BEHIND THE LAB
I wanted a cosy place where food and good moments can be shared. I also wanted to reflect my culinary and cultural background through some items that can be hardly found here in Yangon like the humus or the Tunisian grilled salad. It has been conceived in a way to be affordable with the aim to bring people together.
YOUR MOST FAVOURITE TAPAS BAR IN THE WORLD
I did not have the chance to go to Spain yet but I have tried a fantastic Peruvian tapas restaurant in Hong Kong called Chicha. Tapas may be a Spanish word but the concept is worldwide; Lebanese have Mezzes and in Tunisia we have Kemia, which is identical to Tapas but with different flavours.
WHAT’S YOUR IDEA OF A GREAT NIGHT
Very simple – relaxed atmosphere, good friends, good food, good wine.
YOUR FAVOURITE WINE/COCKTAIL
My favourite cocktail is one I had in a bar in NY called the Summit – Ground to Glass. It is on the salty side and really different from any other cocktail I had before. It is particularly appealing to me because of my culinary background.
WHAT DO YOU DO DURING YOUR DOWNTIME
Very often I try to have lunch and dinner in different restaurants in town to check how things are evolving. Let say that my life revolves around food J
IF YOU CAN INVITE ANYONE, DEAD OR ALIVE, TO THE LAB, WHO WOULD IT BE, AND WHAT WOULD YOU SERVE
My mom from whom I learnt all the North African dishes, My Palestinian uncle from whom I learnt the Middle Eastern dishes and whoever who wants to try delicious tapas from around the world in a great atmosphere.
